Simple sultana muffins
I'm not sure if anything is simple with an 18 month old but I will admit this wasn't as chaotic as I imagined it to be! My toddler is particularly spirited and mischievous and needs to be busy all the time! I thought she would enjoy making cakes and getting all messy, which is a rather favourite hobby of hers!
I thought I would start with something simple and decided to go for sultana muffins as we had everything in the cupboards already.
I got all the ingredients and equipment out on the side and then I used a small step ladder for my daughter to stand on so she could reach the worktop. I weighed the ingredients and put them in the bowl for her but I let her help me do the mixing, which she really liked doing.
We had a little drama when I put it in the electric mixer for a few minutes because she wanted to carry on mixing but I saved the day when I put it back on the worktop so she could start spooning it into the baking trays!
Obviously I helped her to do this, she mostly just focused on one cupcake and I did the rest!
She was a little upset that they then had to go in the oven but you can't win them all!
I used a basic muffin recipe on bbc good food which you can find here: http://www.bbcgoodfood.com/recipes/2331641/basic-muffin-recipe
I just added sultanas to make them a little more interesting. Here is the finished product!

Now that I have given it go I must admit it was a really nice activity to do with my daughter and she really enjoyed it so I think we will be doing more of this!
